This English sparkling wine is made from Chardonnay, Pinot Noir and Pinot Meunier. After hand-picking in the beautiful Dorset countryside, the grapes were whole-bunched pressed to obtain just the finest juice. Bottling and the addition of more yeast to start the secondary fermentation took place after 9 months. The wine was left to mature on its lees for over 4 years.
A premium sparkling wine with refined character and definition. It has an attractive lemon-gold core with a trace of tiny, slow bubbles. The wonderful savoury aroma includes grilled hazelnuts and toasted brioche alongside sweeter notes of butterscotch. The palate is rich with a creamy texture from the persistent mousse. It shows good autolytic character including baked apple strudel, buttered toast and a hint of porcini mushroom. It is beautifully complex with excellent weight on the mid-palate and a seamless, lingering finish.
